Paolo Leo's Malvasia Nera MoraMora is produced 100% with this very particular native vine, which has always been present in the area alongside Negroamaro; the vineyards grow in the rural area of San Donaci in the province of Brindisi. The harvest is carried out in the early hours of the morning, to bring bunches of grapes to the cellar at a cool temperature. After crushing-destemming, the must ferments in stainless steel at a controlled temperature of 22-24°C for approximately 10 days, with pumping over and delestage to extract color and tannins and to oxygenate the mass. The wine is then drawn off in a soft press, undergoes malolactic fermentation in steel, then matures for 3 months in second and third passage French oak barriques.

Paolo Leo's Malvasia Nera del Salento MoraMora has an intense and impenetrable purple color. On the nose it is very intense with penetrating notes of blackberry jam, dried plums, mace and myrtle; These sensations are confirmed in the mouth, supported by a certain freshness and sweet tannin. An aromatically imposing wine, it happily meets the exotic beef and plum tajine.
