The Aglianico del Vulture Rotondo by Paternoster comes from the eponymous Contrada in the Agro of Barile, historically a true cru. The vineyard of Villa Rotondo is located at about 500 meters above sea level and consists of old plants trained in guyot. The porous tuff soil retains winter rains, thus becoming an important reserve during the hot and dry summer months in Basilicata, while the significant day-night temperature fluctuations enhance the formation of aromas. The maturation of Aglianico is slow and long, with the harvest often occurring in November. The picking is strictly manual in small boxes; the fermentation in stainless steel of the destemmed grapes lasts with maceration for 15 days at 25/28°C, with periodic pump-overs and punch downs. The malolactic fermentation and aging take place in new French barriques for 14 months, followed by 12 months in the bottle. AGLIANICO DEL VULTURE ROTONDO PATERNOSTER: TASTING NOTES The Aglianico del Vulture Rotondo by Paternoster is a deep and luminous ruby red. On the nose, it reveals aromas of berries, particularly raspberry, blackberry, and blueberry, then an exotic spiciness and hints of coffee and cocoa, along with balsams of cinchona, potpourri, medicinal herbs, and a mineral note of rock and smoke. The palate is vibrant, fresh, powerful, with an energetic tannic structure and great alcoholic generosity, marked sapidity, and an extremely long finish. Excellent with Lucanian lamb or with aged local pecorino cheeses.
