Pellegrino's Syrah Tareni comes from vineyards in the Salemi countryside and in Mazara del Vallo, in the province of Trapani. We are on clayey soils, rich in minerals, at an average altitude of 100 metres; the climate is perfectly Mediterranean: mild winters, limited rainfall, very hot and windy summers. It is harvested between the third ten days of August and the first ten days of September, then we proceed with a partial maceration at low temperature to safeguard the aromas, and a subsequent fermentation with regulated temperature (the temperature control serves to ensure that the fermentation takes place develops slowly and constantly and that there are no fermentation blocks, with the possible triggering of fermentations caused by other fungi or unsuitable bacteria). The refinement lasts for 4 months in steel.
SYRAH TARENI PELLEGRINO: THE TASTING
Pellegrino's Syrah Tareni is a concentrated and bright ruby red. On the nose it is fragrant and typical, with notes of mulberry, violet, plum, cherry, black pepper and liquorice. On the palate it has smooth tannin, fruit softness and a certain freshness. So good with roasted larded quail! But even more simply with buffalo and sausage pizza.
