The Zibibbo Gibelè by Pellegrino comes from the vineyards in the province of Trapani. We are between sea level and 400 meters in altitude, on clay soils; here the climate is predominantly Mediterranean, with mild winters, limited precipitation, and hot, breezy summers, conditions that allow for the natural health of the plants. The harvest takes place starting from the first decade of September; the grapes undergo partial maceration, then they are gently pressed and ferment at controlled temperatures. The wine then ages briefly in steel for 4 months, and an additional period in the bottle. ZIBIBBO GIBELÈ PELLEGRINO: TASTING The Zibibbo Gibelè by Pellegrino presents a bright straw yellow color. On the nose, it is intensely aromatic, with characteristic notes of fresh grapes, jasmine, lavender, and then green apple and cedar. On the palate, it is dry, slightly savory, with citrus freshness and a great correspondence with the olfactory profile. Very suitable for pairing with sushi, as well as a chickpea puree with pink shrimp.
