Pellegrino's Giardino Pantelleria natural Passito di Pantelleria is 100% Zibibbo grown on Pantelleria saplings, a UNESCO heritage site. On the island the soils are of volcanic origin, sandy and slightly clayey and the vineyards are between sea level and 300 meters above sea level; here the climate is purely Mediterranean, with mild winters, limited rainfall and hot, windy summers, conditions which allow the natural healthiness of the plants. The harvest takes place in the first and second ten days of September. A part of the grapes is gently pressed and fermentation begins; after a certain time, the portion of grapes left to dry in the meantime is added, and the fermentation process continues until the desired amount of residual sugar is reached. The wine then ages in steel tanks, at a controlled temperature, for 10 months.
PASSITO DI PANTELLERIA PELLEGRINO: TASTING
Pellegrino's Giardino Pantesco natural Passito di Pantelleria shimmers in the glass with shades between gold and amber. On the nose it offers enveloping notes of apricot and dried fig, prickly pear jelly and candied citron. On the sip it is aromatically coherent, with honey softness and citrus freshness. To create a happy overseas pairing, this Passito is delicious with the American Pecan Pie.
