Pio Cesare's Barolo Ornato comes from a small selection of 100% Nebbiolo grapes from the cru of the same name located in Serralunda d'Alba (CN). The red winemaking process included a phase of alcoholic fermentation in stainless steel with maceration of the must in contact with the skins for approximately 30 days. The refinement took place in French and Slavonian oak barrels and for a small part in barriques, for a total period of 30 months.
BAROLO ORNATO PIO CESARE: TASTING
Pio Cesare's Barolo Ornato reveals itself to the eye as having a seductive ruby red color with garnet reflections. On the nose it expresses aromas of small ripe red fruits that chase floral hints of violet and notes of dark spices. The olfactory profile is complemented by hints of balsamic herbs and undergrowth. The sip is elegant and powerful, supported by structured tannins and a long fruity and balsamic finish. It can be enjoyed to the full with important dishes based on red meat or game such as an excellent Bourguignonne beef stew.
