The Dolcetto by Pio Cesare is part of the company’s line dedicated to everyday wines, those wines of regular, domestic, and relaxed consumption from the more traditional Piedmont. The grapes, 100% Dolcetto, come from the vineyards owned by the Boffa family in Treiso (Il Bricco) in the Barbaresco area and in Sinio (Val di Croce and Bricco dello Stornello). The vinification is carried out in steel with a short maceration and temperature control; the wine remains in steel to mature until the bottling in March following the harvest.
DOLCETTO PIO CESARE: TASTING NOTES
The Dolcetto d'Alba by Pio Cesare presents a ruby red color with crimson reflections. On the nose, it is very fragrant and aromatic, with hints of raspberry juice, strawberry jam, black pepper, mountain herbs, and resinous balsams. The palate has good structure, dense tannins, and a slightly almondy finish. It should be served at cellar temperature, alongside a good pizza and regional cold cuts, as well as more elaborate dishes, such as rabbit and rosemary plin.
