The Barolo Pio Cesare is the result of a careful selection of Nebbiolo grapes from owned vineyards, located in different positions within the Barolo area: in Serralunga d'Alba (Cascina Ornato, La Serra, and Briccolina), in Grinzane Cavour (Gustava and Garretti), in La Morra (Roncaglie), in Novello (Ravera), and, starting from the 2015 harvest, in Monforte d'Alba (Mosconi). The winemaking takes place in steel with skin maceration for about 30 days at rather high temperatures. The aging occurs in French and Slavonian oak barrels for about 30 months and in small part in barrique. As the company also highlights on the label in a friendly tone: this is not a "base" Barolo, but has always represented, as per tradition, the truest expression of the various great terroirs of the Barolo area.

The Barolo Pio Cesare is a very classic style Barolo that presents itself in the traditional garnet dress. On the nose, it is rich in dark fruit, fresh and in jam, dried violet, hints of mint, spiced blankets, and an intoxicating aroma of fireplace ash. On the palate, it has body, wonderfully smooth tannins, and incredible length. Full enjoyment with a succulent grilled wagyu ribeye.
