Planeta's Etna Bianco, produced in the Etna winery Feudo di Mezzo since 2012, is 100% Carricante, from the Montelaguardia vineyard in the municipality of Castiglione di Sicilia. We are very high, between 690 and 720 meters above sea level, on black soils from lava sands, rich in minerals. The harvest takes place in the first half of October; the grapes are immediately cooled to 8°C before sorting, destemming, and soft pressing. The decanted must is transferred and ferments at 15°C, in stainless steel, except for 15%, which ferments in tonneaux. The resulting wines remain until February on the fine lees with continuous stirring. The brief aging of about a month also takes place partly in steel and partly in 50-hectoliter wooden barrels.

Planeta's Etna Bianco enters the glass with a pale and elegant golden yellow. On the nose, one is immediately captivated by notes of Mediterranean scrub flowers, such as everlasting and calicotome, and aromas of acacia, followed by hints of fresh almond, white peach, and burnt rock. Excellent with good buffalo mozzarella, anchovies, and basil, as well as with a swordfish tartare or simply with spaghetti alla pumarola.
