Baccarossa by Poggio Le Volpi is Nero Buono in purity, an indigenous Lazio grape rich in anthocyanins and capable of producing wines with significant fruit. The vineyards are located in various municipalities of the region, always on volcanic, pozzolanic, and sandy soils, in hilly areas that are influenced by sea breezes. Fermentation and maceration are carried out under temperature control, followed by a soft pressing, and then aging for at least one year in woods of different capacities, origins, and toasting.

It presents a ruby red color of bright sheen. On the nose, red fruits dominate with cherry in alcohol, then aromas of rhubarb, Mediterranean scrub, undergrowth, cocoa, cinchona, coffee, and iron emerge. On the palate, it is balanced, with velvety tannins, nice freshness, and remarkable persistence. It pairs wonderfully with "coda alla vaccinara"! But also with braised ossobuco with peas, and simply, with some good Pecorino Romano.
