Japonica type rice, "long A" group: a recent variety with large and crystalline grains, good amylose percentage, medium stickiness, and good cooking resistance. Commonly used for risottos, salads, and timbales.

The Principality's recipe:Saffron and zucchini flower risottoIngredients for 4 people: 300 g of Baldo Rice, 2 trumpet zucchinis, 8 zucchini flowers, 80 g of butter, 50 g of grated cheese (Grana Padano or Parmigiano Reggiano), 20 g of shallot, 1 small glass of dry white wine, 1 sachet of saffron, salt and pepper, 1 liter of broth.Preparation: chop the shallot and sauté in 20 g of butter, add the zucchinis cut into small cubes, rice and toast everything. Pour in the wine, allow it to evaporate and add a little broth at a time, stirring continuously with a wooden spoon. Halfway through cooking, add the saffron and the well-cleaned zucchini flowers. Once cooked, adjust the salt and pepper and, after a few minutes, stir in the remaining butter and grated cheese.
