The Barbaresco from Produttori del Barbaresco comes from various vineyards in the denomination (the cooperative winery currently covers 110 hectares and has 55 suppliers). The soils are generally clayey-limestone with sandy veins. The vinification is carried out traditionally: fermentation in steel with one month of maceration, pumping over twice a day (wetting the cap with the liquid part of the mass extracted from the bottom of the tank) and subsequent malolactic fermentation. The aging takes place in 50-hectoliter oak tuns for 24 months and then in bottles for 6 months before being released on the market.
BARBARESCO PRODUTTORI DEL BARBARESCO: THE TASTING
The Barbaresco from Produttori del Barbaresco presents a garnet color with lively ruby reflections. On the nose, it is typical, with notes of violet, wild strawberries, pepper, cloves, mentholated balsams, and underbrush. The palate is warm and vibrant, with well-present tannins. It pairs well with a tasty braised beef cheek with chanterelles and mashed potatoes, or with the always-loved filet mignon with green pepper.
