The Fiano Zìn of the Producers of Manduria comes from vines that are over 20 years old. The grapes are harvested in mid-September and vinified in white in stainless steel tanks, with temperature control. The refinement also takes place in steel to preserve the immediacy of the aromatic profile, and then in the bottle for a short period before marketing. The Cooperative and its members adopt integrated pest control, a crop protection practice which involves a drastic reduction in the use of pesticides; furthermore, the winery has decided to suspend all pesticide treatments approximately 40 days before harvesting, to give the plant time to degrade any pesticide residues.
FIANO ZÌN MANDURIA PRODUCERS: TASTING
The Fiano Zìn from Produttori di Manduria appears in the glass with a bright straw color. The nose is intense, with aromas of white peach, melon, aromatic herbs and balsamic hints of pine; in the mouth it is warm and soft, with nice flavor, strong freshness and a pleasant slightly bitter floral note in the finish. Very good with pizzarieddi with aubergine sauce.
