In our orchards in Alba, we harvest apricots at the right point of ripeness, which are processed after a few hours and cooked with the sole addition of cane sugar to obtain a completely natural jam in accordance with Piedmontese tradition. The "open sky" processing method is the classic method used since ancient times for preserving fruit.
