Here in Alba we grow plums that are harvested in our orchards at the right point of ripeness and processed after a few hours, they are cooked adding only a small amount of fructose. The "open sky" processing method is the classic method used since ancient times for fruit preservation. We thus obtain a product that enhances the flavor of the fruit used and with the artisan characteristics.
