It is the most traditionally used rice. It undergoes a handmade processing that gives the grain a characteristic ivory color, different from classic industrial white rice. This delicate refining process allows most of the nutritional substances in the grain to be preserved, giving it a unique aroma and flavor.

In the kitchen: ideal for preparing soft and creamy risottos, it releases a lot of starch when stirred continuously during cooking. When cooked using pilaf methods, it allows for more separated risottos. Cooking time: 16-18 minutes Storage: rice retains its specific properties if stored in a cool, dry, and ventilated environment, with temperatures between 4°C and 17°C.
