This is the most traditionally used rice. It undergoes an artisanal processing that gives the grain a characteristic ivory color, different from classic industrial white rice. This delicate refining process allows most of the nutritional substances of the grain to be retained, giving it a particular aroma and flavor.
In the kitchen: ideal for preparing soft and creamy risottos, it releases a lot of starch when stirred continuously during cooking. When cooked using pilaf methods, it allows for more separate risottos.
