The Pinot Noir Sanct Valentin Riserva from San Michele Appiano is made from 100% Pinot Noir grapes grown in the Appiano area along the Wine Road, in the province of Bolzano. Here, the soils are composed of morainic deposits and limestone gravel and are located at an altitude between 400 and 550 meters above sea level. After a 3-day cold pre-maceration, the must underwent alcoholic fermentation in steel. Once the malolactic fermentation was completed, which helps soften the structure and aromatic profile, the wine rested for 12 months in barrique-tonneau. After the blending of the various lots, the Pinot Noir Sanct Valentin matured for an additional 6 months in large wooden barrels. The Sanct Valentin line includes wines from the most prestigious vineyards of the San Michele Appiano winery. PINOT NOIR SANCT VALENTIN SAN MICHELE APPIANO: THE TASTING The Pinot Noir Sanct Valentin from San Michele Appiano presents itself with a ruby color. On the nose, it expresses intense aromas of cherry and small red fruits intertwined with floral notes of violet and seductive balsamic and dark spice hints. Complex and elegant, on the palate it reveals a smooth tannic structure and an exhilarating taste balance. The finish is long and persistent. It pairs well with cured meats and aged cheeses, as well as with first and second courses of meat prepared with white or red meat or game. Surprising when paired with grilled white fish dishes.
