Tommasi's Amarone is produced with 50% Corvina Veronese, 30% Rondinella, 15% Corvinone, and the remaining 5% Oseleta. The grapes are harvested and selected manually. They then undergo traditional natural drying in a spacious and airy fruit drying room. Fermentation occurs slowly in wooden vats for 30 days. Aging lasts for 3 years in Slavonian oak barrels of 35 hectoliters.
AMARONE TOMMASI: TASTING
Tommasi's Classic Amarone from Valpolicella presents itself in the glass with a beautiful garnet color with intense ruby reflections. The aromas are varied and generous: cherry jam, plum, dried violet, and a wide range of spices, from vanilla to pepper to clove, with notes of cocoa and leather. On the palate, it is soft, flavorful, with a certain vibrancy in the tannins, and long. It should be tried with black pepper braised ravioli, or with grilled beef and pork.
