The Primitivo Torcicoda di Tormaresca is produced with selected grapes coming from the vineyards trained using sapling and spurred cordon, at the Tenuta Maìme di San Pietro Vernotico, south of Brindisi. The grapes are harvested slightly overripe and vinified at a controlled temperature; the maceration lasted beyond 10 days. The malolactic fermentation is carried out in French and Hungarian oak vats, where the wine then ages for approximately 10 months. This is followed by a further period of 8 months of refinement in the bottle, before being placed on the market.
PRIMITIVE TORCICODA TORMARESCA: THE TASTING
The Primitivo Torcicoda di Tormaresca has an intense ruby red with light purple hues; the nose is opulent, with hints of black cherries and ripe blackberries and a hint of vanilla, liquorice and coffee. In the mouth it is tasty, velvety, long, with fruit and toasted notes. It goes well with structured meat dishes such as pigeon ragù or the traditional Apulian "marro", a large lamb roll and its offal.
