The Maximo di Umani Ronchi is a historic Sauvignon Passito, produced since 1992. It originates from the highest part of the Villa Bianchi estate where, thanks to the particular climatic conditions determined by the alternation between high humidity and constant daytime ventilation at rather low temperatures, the grapes are affected by Botrytis Cinerea in its noblest form. The vineyard, covering about two hectares, faces north on the crest of a hill, 150 meters above sea level, planted on moderately deep, clayey-silty, calcareous soil with the presence of skeletal alluvial deposits. The yield per hectare is extremely low and rarely reaches 30 quintals. The harvest is a very delicate operation: at least three passes are carried out, from mid-October to December, and the selection of grapes is aimed at collecting only those bunches, or portions of them, that have reached the right degree of concentration due to the attack by noble molds. The grapes are pressed whole using a small soft press, and the resulting must, after static decantation, is fermented with its own yeasts at a temperature of 15°C for a month. The Maximo ages for about a year in small stainless steel containers before being bottled.

The Sauvignon Passito Maximo by Umani Ronchi has a beautiful golden color illuminated by amber reflections. On the nose, it expresses pronounced aromas of honey, beeswax, apricot, and canned peach followed by ripe fig, dates, candied fruits, and citrus, all fused in a briny background. Rich in the mouth and gratifying, with powerful citrus acidity that balances the sweetness of honey. The perfect pairing is with Neapolitan pastiera.
