The Valpolicella Superiore Ripasso by Villa Fura is made from 60% Corvina, 25% Corvinone, and 15% Rondinella grapes from pergola-trained vineyards, with guyot pruning. The harvest took place in mid-September. In the winery, the carefully destemmed bunches were gently pressed to obtain the must, which underwent alcoholic and malolactic fermentation. Subsequently, following the ancient technique of Ripasso, the base wine was fermented in contact with the pomace of Amarone for a period of 15 days, becoming unmistakably richer in terms of body, aromas, and extracted substances. The aging was for 18 months in barriques. VALPOLICELLA SUPERIORE RIPASSO VILLA FURA: TASTING NOTES The Valpolicella Superiore Ripasso by Villa Fura captivates the eye with its ruby red color and garnet reflections. On the nose, it evokes aromas of sour cherry and small ripe red fruits that chase hints of balsamic notes and touches of coffee, cocoa powder, and dark spices. The tasting is intense, soft, and deep, characterized by velvety tannins and a long fruity and spicy finish. At the table, it pairs well with aged cheeses as well as rich dishes based on red meats or game. It is worth trying with tagliatelle with venison ragù and mushrooms.
