Sauvignon Tra Donne Sole di Vite Colte is a tribute to Cesare Pavese, a pure Sauvignon from vineyards located in two different areas. From one, grapes are harvested slightly early to achieve acidity and the richness of typical Sauvignon varietal aromas, while from the other, slightly later, to gain extractive richness and tropical fruit aromas. Vite Colte is a cooperative project that brings together 180 producers and boasts a vast heritage of vineyards. In order to maintain high quality standards, it has been applying strict protocols signed with its suppliers for years; for example, in the selection of vineyards, only those with an average plant age of over 15 years, managed under integrated and/or organic production, with low yields per vine, etc. Both fermentation and aging on the lees for 3 months take place in steel containers at low temperatures.
SAUVIGNON TRA DONNE SOLE VITE COLTE: THE TASTING
Tra Donne Sole di Vite Colte shows in the glass a straw-yellow color with golden reflections. On the nose, it is intense, with notes of tomato leaf, elderflower, pineapple sage, and hints of licorice. The palate is full, silky, with alcoholic generosity well balanced by freshness and balsamic notes. Very suitable for pairing with lightly smoked salmon trout carpaccio.
