Passerina Vigor by Umani Ronchi was obtained from 100% Passerina grapes grown in the Osimo area, in the province of Ancona. The vineyards of origin, exposed to the West and South-West, are made up of vines aged between 6 and 20 years, located at an altitude ranging from 150 to 300 meters above sea level. After the manual harvest, the grapes were transported to the cellar and subjected to light pressing to obtain the must. The alcoholic fermentation, which converted the sugars into alcohol, took place in stainless steel at a controlled temperature of 14-16°C, for a period of 8-10 days. Before marketing, Passerina Vigor was refined for a few months in steel.

Passerina Vigor by Umani Ronchi presents a straw yellow colour. On the nose, aromas of pear and white pulp fruit emerge which are accompanied by hints of white spring flowers and light notes of aromatic herbs. The sip is fresh and light, supported by a vivid flavor that persists in the finish. At the table it pairs well with fresh and semi-mature cheeses as well as vegetarian dishes and delicious white seafood recipes.
