The Sauvignon of Casale del Giglio is the result of an in-depth study on the introduction of this grape variety, native to the Bordeaux area, in the Agro Pontino. Sauvignon is a grape variety that should be cultivated in training forms that do not excessively expose the clusters to direct sunlight, as it is rich in light-sensitive aromas that can easily oxidize. Harvest usually takes place in the first days of September, in order to preserve a good level of acidity in the grapes, ensuring good ripening while avoiding the appearance of excessive vegetal notes. After soft pressing and the selection of the free-run juice, alcoholic fermentation is induced very quickly, in order to preserve all the typical aromatic characteristics of the grape variety. At the end of fermentation, the wine's temperature is reduced to about 8° C to prevent the start of malolactic fermentation. Sauvignon is bottled between January and February.
SAUVIGNON CASALE DEL GIGLIO: THE TASTING
The Sauvignon of Casale del Giglio presents itself with a lively straw yellow color; on the nose, it is generous with aromatic herbs, first and foremost sage, on a background of good minerality. The palate is fresh, savory, and long. Good with a zucchini carbonara.
