Il Primitivo Neprica di Tormaresca è nato da uve 100% Primitivo cresciute in prossimità della costa adriatica nell’ambito della tenuta Maime a San Pietro Vernotico. Il processo di vinificazione si è svolto interamente in serbatoi di acciaio inox a temperatura controllata. La macerazione del mosto sulle bucce, utile per l’estrazione da parte del mosto di aromi e colore, si è svolta per 8-10 giorni a una temperatura non superiore ai 26°C. Dopo la fermentazione alcolica, volta a trasformare gli zuccheri in alcol, e la fermentazione malolattica avviata per “ammorbidire” il vino nella corposità e nei profumi, il Neprica 2017 di Tormaresca si è affinato per 8 mesi in acciaio e per ulteriori 4 mesi in bottiglia prima di essere commercializzato.
PRIMITIVO NEPRICA TORMARESCA: LA DEGUSTAZIONE
Il Primitivo Neprica di Tormaresca si presenta alla vista di un intenso colore rosso rubino. All’olfatto rivela avvolgenti profumi di amarena e frutti rossi in confettura accompagnati da docili sentori di spezie scure. All’assaggio è morbido e corposo, sostenuto da tannini levigati e da un buon equilibrio fresco-sapido. Nel finale persistono le note fruttate. A tavola si abbina bene a salumi e formaggi stagionati ed erborinati come anche a primi e secondi piatti di terra a base di carni rosse e selvaggina.
