The Champagne Jacquesson Cuvée 747 Extra Brut is born from a blend of wines made from Chardonnay (57%), Pinot Meunier (22%), and Pinot Noir (21%). The vineyards are located in the municipalities of Aÿ, Avize, and Oiry - which fall into the exclusive Grand Cru category - and in Dizy and Hautvillers (Premier Cru). For 33%, the cuvée is completed with reserve wines. After an initial fermentation in oak barrels with aging on fine lees (residues from fermentation that enrich the wine's aromatic profile and structure), the reserve wines are added. This is followed by bottle fermentation according to the so-called Champenoise Method with aging on the yeast for at least 36 months.
CHAMPAGNE JACQUESSON CUVÉE 747: TASTING
The Jacquesson Cuvée 747 Extra Brut Champagne seduces in the glass with its straw-yellow color with golden reflections, enlivened by a fine perlage. On the nose, there is an intense interplay of aromas of candied yellow-fleshed fruits, dried fruits, and yellow citrus intertwined with mineral notes. The sip is rich and silky, supported by a fine aromatic complexity and a deep mineral freshness that lingers in the long finish. Excellent as an all-meal wine, it pairs well with fresh and aged cheeses and tasty seafood dishes based on fish and shellfish. Surprising when paired with white meats.
Maison Jacquelsson cultivates 36 hectares of vineyards, 26 owned and 10 rented, all Premier or Grand Cru located in the hilly area of the Vallée de la Marne and in the Cote des Blancs.
