"IL SESTANTE - I PIANETI" VALPOLICELLA SUPERIORE DOC 2018 - 1 bottle of 0.75 lt
Grapes: Corvina Veronese 70%, Rondinella 25%, Molinara 5%
Origin: Vineyard "I Pianeti" of Tenuta IL SESTANTE, located in a hilly area and in a privileged position for great wine.
Vinification and Aging: Manual harvest at the end of September; fermentation in steel barrels for about 9 days, then refermented on the Amarone pomace for about 8 days, with daily pump-overs. It then ages for 15 months in 65 hl Slavonian oak barrels
Color: intense ruby red
Aroma: abundant and complex, with remarkable elegance, featuring floral notes
Taste: good structure on the palate, excellent balance, with hints of cherry and jam.
Alcohol content: 13% Vol.
Serving temperature: 8-10°C
First vintage: 1987
Pairing: Roasts and medium-aged cheeses. Valpolicella Ripasso is soft and round, and also pairs well with small game and aged cheeses.

Grapes: Turbiana 100%
Origin: The soil is mixed, with layers of fine sediments such as clay, predominantly calcareous, and silt. The vines are trained with the typical "arch training," where the two remaining shoots after pruning are bent into an arc and tied. The richness of the territory and the selection of the best bunches allow for a wine of great balance and quality.
Vinification and Maturation: 4 months in stainless steel
Color: bright straw yellow
Aroma: white flowers with hints of peach and citrus background
Taste: harmonious, round, persistent on the palate with hints of yellow fruit and honey.
Alcohol content: 12.5% Vol.
Serving temperature: 8-10°C

Pairing: Ideal as an aperitif and paired with appetizers or lake fish such as trout, perch, and lavarello, perfect with salads and Asian cuisine.
