Pavò's Franciacorta Nature comes from grapes that come from the hilly vineyards of Provaglio d'Iseo, at the north-eastern limit of the denomination, planted on soil of morainic origin. The 90% Chardonnay and 10% Pinot Noir grapes are softly pressed, then the free-run must ferments in stainless steel at a controlled temperature of 15°C, and a small percentage in barrique. This base wine ages for approximately 6-7 months in steel and wood, then it is bottled for second fermentation and aged sur lie for at least 24 months. No dosage is carried out at disgorgement.

Franciacorta Nature by Pavò Franciacorta is straw yellow illuminated by a fine and persistent perlage. On the nose it is immediately mineral and minty, then notes of kiwi, white melon, nectarine, and again, lily of the valley, almond brittle and vanilla yeast open up. The drink is very lively, mineral, with a citrus aftertaste. It practically always goes well, from the aperitif to vegetarian, fish or meat dishes with a certain structure, to give some delicious examples: rice and peas, stuffed sardines with gratin herbs and chicken tuna.
