Sauvignon Ronco del Crò di Venica is an important wine for the company because it evokes its origins: it all began with the first purchases of vineyards on the Crò hill in 1930. The vineyards of this Sauvignon are located in the locality of the same name, in various altitudes and exposures, which entails different moments of ripening of the grapes, therefore different harvesting steps. The lands of the Collio are made up of stratified marl and sandstone of Eocene origin, known by the name of "Ponka". The harvest of the 2019 vintage took place between August 30th and September 19th; the grapes were macerated at low temperature for a day, with a cap of recycled carbon for protection. The mass fermented and aged on the yeasts for 6 months in steel for 90%, in large wooden barrels for the remaining 10%; to be assembled and then bottled on full moons starting from the end of March.
SAUVIGNON RONCO DEL CERÒ VENICA: THE TASTING
Sauvignon Ronco del Crò di Venica is pale straw yellow with greenish reflections. The olfactory spectrum is broad: from notes of tropical fruit (mango, papaya and passion fruit) from the south-facing vineyards, to delicately vegetal notes (tomato leaf, elderberry, gooseberry), and even references to yellow peach, grapefruit and brackish gusts. In the mouth it is fresh, savory, soft and with a long mineral persistence. Very good with San Daniele ham accompanied by a Sicilian yellow grapefruit salad.
