Ewa Cuvée Bianco by Elena Walch comes from 60% Gewürztraminer, 20% Müller Thurgau and 20% Chardonnay grapes vinified separately. In the cellar, after soft pressing, only the Gewürztraminer was subjected to a pre-fermentation maceration on the skins for 6 hours. The fermentation of the must took place in stainless steel at a temperature of 20°C. The refinement lasted a few months in contact with the yeasts in stainless steel. The assembly took place in the spring following the harvest.
EWA CUVEE WHITE ELENA WALCH: THE TASTING
Ewa Cuvée Bianco by Elena Walch stands out to the eye as having an intense straw yellow colour. On the nose it expresses aromas of yellow pulp fruit and floral hints of rose and hawthorn combined with notes of aromatic herbs. The sip is fresh and enveloping, with a clearly fruity and floral taste. Pleasant minerality in the finish. Excellent as an aperitif, at the table it pairs well with cheeses and vegetarian dishes as well as tasty seafood recipes.
