Pellegrino's Zibibbo Gibelè comes from vineyards in the province of Trapani. We are between sea level and 400 meters above sea level, on clayey soil; here the climate is purely Mediterranean, with mild winters, limited rainfall and hot, windy summers, conditions which allow the natural healthiness of the plants. The harvest takes place starting from the first ten days of September; the grapes are partially subjected to maceration, then they are delicately pressed and fermented at a controlled temperature. The wine then ages briefly in steel for 4 months, and a further period in the bottle.
ZIBIBBO GIBELÈ PELLEGRINO: TASTING
Pellegrino's Zibibbo Gibelè is bright straw yellow. On the nose it is aromatically intense, with characteristic notes of fresh grapes, jasmine, lavender, and then green apple and cedar. In the mouth it is dry, slightly savory, with a citrus freshness and great correspondence with the olfactory profile. Very suitable to accompany sushi, such as a chickpea puree with pink prawns.
