The Valpolicella Superiore Ripasso by Villa Fura was made from 60% Corvina, 25% Corvinone and 15% Rondinella grapes from pergola-trained vineyards, with Guyot pruning. The harvest was carried out in mid-September. In the cellar, the bunches, carefully destemmed, were softly pressed to obtain the must subjected to alcoholic and malolactic fermentation. Subsequently, according to the ancient Ripasso technique, the base wine was fermented in contact with the Amarone pomace for a period of 15 days, enriching itself in an unmistakable way in terms of body, aromas and extracted substances. The refinement lasted 18 months in barriques. VALPOLICELLA SUPERIORE RIPASSO VILLA FURA: TASTING Villa Fura's Valpolicella Superiore Ripasso seduces the eye with its ruby red color with garnet reflections. On the nose it recalls aromas of black cherry and small ripe red fruits that chase balsamic hints and notes of coffee, cocoa powder and dark spices. The taste is intense, soft and deep, characterized by velvety tannins and a long fruity and spicy finish. At the table it is appreciated with mature cheeses as well as rich dishes based on red meat or game. Try it with tagliatelle with venison and mushroom ragout.
