The name Cervaro derives from the noble family that owned the Castello della Sala during the 14th century: the Monaldeschi della Cervara. Chardonnay grapes combined with a small part of Grechetto for a wine designed to refine over time and represent the elegance and complexity of a unique place. Cervaro della Sala was one of the first Italian wines to carry out malolactic fermentation and aging in barriques with the first vintage in 1985. With a
bright yellow color with green reflections, the Cervaro 2014 presents itself with a rich, complex and fresh bouquet, with delicate aromas of hazelnut and vanilla butter and white flowers. It is elegant on the palate, characterized by an incredible minerality. The delicate flavor of roasting blends harmoniously with the structure, enhancing the tropical and citrus notes.

Pairings: excellent throughout the meal, it is enhanced with countless and rich seafood preparations. Also to be tried on truffle-based first and second courses.
