The Etna Bianco di Cottanera was produced from 100% Carricante grapes coming from the Cottanera and Diciassettesalme districts of the municipality of Castglione di Sicilia (CT). The vineyards of origin are rooted in lava-alluvial and lava-clayey soils, at an altitude between 720 and 750 meters above sea level. The manual harvest was carried out with a yield of 60 quintals per hectare. The winemaking included a 24-hour cold maceration phase which facilitated the extraction of primary aromas. The alcoholic fermentation took place in stainless steel at a temperature of 16° for a period of 20-25 days. The refinement took place for 6 months in contact with the yeasts.
ETNA BIANCO COTTANERA: TASTING
Cottanera's Etna Bianco presents itself to the eye with a straw yellow color with greenish reflections. On the nose it releases aromas of white pulp fruit that meet hints of orange blossom and jasmine and citrus notes of cedar and lemon. On the palate it is pleasant and mineral, supported by a vibrant freshness and a herbaceous and citrus finish. Try it with a delicious cuttlefish, artichoke and lemon salad.
