Illuminati's Pecorino was born from 100% Pecorino grapes coming from a vineyard exposed to the South-East, 250 meters above sea level. The harvest took place by hand in the second ten days of September. In the cellar the bunches were destemmed and subjected to soft pressing. The must thus obtained was fermented 90% in stainless steel tanks at a temperature of 16-18°C and 10% in barriques. In the same containers the wine was refined for a period of 4 months.
PECORINO CONTROGUERRA ILLUMINATI: TASTING
Illuminati's Pecorino presents itself to the eye with a straw yellow color with greenish reflections. On the nose there are aromas of yellow pulp fruit, aromatic herbs and Mediterranean citrus fruits. Tasting gives a vibrant mineral freshness that invites you to take a second sip. Excellent as an aperitif, at the table it pairs very well with vegetarian dishes as well as delicious seafood recipes based on white fish, molluscs and crustaceans.
