The Pavò Franciacorta Brut is the manifesto of the company style. This project began a few years ago in Iseo, in the province of Brescia, at the north-eastern edge of the denomination. The Brut is composed of 90% Chardonnay and 10% Pinot Noir; the alcoholic fermentation of the must takes place partly in steel and partly in barrique. The malolactic fermentation then starts spontaneously, so the wine matures in steel for 5 months and then in wood for another 6. Bottled with the yeasts for refermentation for the foam, it rests on the lees for a period of at least 30 months.
FRANCIACORTA BRUT PAVÒ: TASTING
The Pavò Franciacorta Brut has a brilliant straw yellow color, further illuminated by a fine and continuous perlage. On the nose, it is inviting, with sunny notes of yellow peach, loquat, dandelion that are then enriched with hints of toasted almond, turmeric, and vanilla. On the palate, it is fresh, slightly savory, creamy, and has a spicy persistence. An excellent aperitif, it is very good with almond-crusted hake bites.
