PRODUCTION AREA: own vineyards located in Ascoli Piceno. VARIETY: Pure Passerina. AVERAGE ALTITUDE: 200-300 meters above sea level. SOIL TYPE: medium texture tending towards sandy. TRAINING SYSTEM: Guyot. PLANT DENSITY: 5,000 vines per hectare. YIELD PER HECTARE: approximately 80 quintals of grapes. YIELD PER VINE: approximately 1.5 Kg of grapes. ALCOHOL CONTENT: 12.5° C HARVEST: hand-picked in mid-September, early in the morning or late in the afternoon, in small crates placed in cold rooms before reaching the winery. FERMENTATION: a careful selection of the grapes allows only the best bunches to be used for the production of this wine. The soft pressing is followed by an immediate lowering of the temperature to promote decanting and the removal of suspended substances present in the must. Fermentation takes place in stainless steel tanks at a controlled temperature, between 13 and 15°C. The subsequent aging, which continues until February of the year following the harvest, takes place in thermoconditioned steel tanks, ensuring a constant temperature of about 10°C necessary to preserve its aromatic heritage. HISTORICAL NOTES: ancient vine originating from the Adriatic. Its name seems to derive from the structure of the small, winged cluster, with fairly spherical berries, of intense yellow color, resembling a small sparrow.
