Baccarossa di Poggio Le Volpi is a pure Nero Buono, a native Lazio grape rich in anthocyanins and capable of producing wines with important fruit. The vineyards are located in various municipalities in the region, always on soils of volcanic origin, pozzolanic and sandy, in hilly areas that are affected by the influence of sea winds. Fermentation and maceration are carried out with temperature control, followed by soft pressing, then refinement for at least one year in wood of different capacities, origins and toasting.
Baccarossa di Poggio Le Volpi: TASTING
It has a bright ruby red appearance. The nose is dominated by red fruit with cherries in alcohol, then hints of rhubarb, Mediterranean scrub, undergrowth, cocoa, cinchona, coffee and iron open up. On the sip it is balanced, with velvety tannins, a beautiful freshness and notable persistence. So good with the oxtail! But also with osso buco in pea stew, and again, simply, with good Pecorino Romano.
