Tommasi's Valpolicella Classico was obtained from Corvina Veronese (60%), Rondiella (30%) and Molinara (10%) grapes grown in the company vineyards located in Valpolicella Classica. The latter includes the territories of the municipalities of San Pietro in Cariano, Sant'Ambrogio di Valpolicella, Fumane, Negrar and Marano di Valpolicella, in the province of Verona. The winemaking process included alcoholic fermentation - aimed at converting sugars into alcohol - which lasted for 12 days in stainless steel barrels, and malolactic fermentation useful for sweetening the aromatic and structural edges of the wine. The refinement always took place in stainless steel barrels for a period of 4 months.
VALPOLICELLA CLASSICO TOMMASI: TASTING
The Valpolicella Classico by Tommasi is presented in the glass of a pale ruby color. On the nose it expresses aromas of cherry and small red fruits that intertwine with fragrant floral scents. The sip is agile and pleasant, supported by a lively and well-integrated tannic texture and an intriguing fresh-savory trail that persists in the finish. At the table it goes well with cured meats and semi-mature cheeses as well as delicious land recipes based on red or white meats. Also ideal in combination with tasty fish dishes.
