Type japonica, "long A" group, Carnaroli is the most prestigious variety of Italian rice, used without regional distinctions. Large grain with a high percentage of amylose which ensures low stickiness and excellent cooking resistance, qualities that make it the ideal ingredient for risottos and salads.

The Principality's Recipe: Risotto with Red RadicchioIngredients for 4 people: 250 g of Carnaroli Rice, 200 g of red radicchio, 50 g of beef marrow, 50 g of leeks, 30 g of butter, 40 g of grated cheese (Grana Padano or Parmigiano Reggiano), 1 liter of broth, 50 g of extra virgin olive oil, 25 cl of beer.Preparation: make a base for the risotto with half of the leeks in 20 g of oil; toast the rice, moisten with beer, add the broth and halfway through cooking add the radicchio, which you will have stewed in the remaining oil with leek and beef marrow. Once cooked, stir in the butter and grated cheese.
