The Première Cuvée is a very personal interpretation of the entire region, through a selection of 35 of the 320 crus of Champagne. Golden straw color and very fine perlage. The hue reveals the high percentage of Chardonnay and the exclusive use of the first pressing.The fineness of the perlage is due to a noble raw material, a perfectly controlled cellar temperature, cool and constant, and a very long bottle aging. The initial aromas reveal the citrus notes of Chardonnay: green lemon, grapefruit. Then, the aromas of red fruits appear: currant, raspberry, sour cherry, characteristic of Pinot Noir. Allowing it to open further in the glass reveals a connection with slightly candied fruits, like the exotic ones from Pinot Meunier (pineapple).The attack is lively thanks to a low dosage that respects the authenticity of the wine. The nose confirms the first flavors of citrus, almonds, toasted bread... but also of sour cherry jelly followed by dark fruits like cherry, fig, or blackberry. In its evolution, its aeration, its warming, it reveals subtle flavors of plum and pear. The palate is broad without being heavy, quite long, leaving a very clean finish.
