With the entry into production of the new olive groves, the Azienda Agricola “I Mori” today is in a position to offer customers one of the most valuable extra virgin olive oil in the world, which is marketed under the Laudemio brand
The company is one of the founders of the Consorzio Laudemio, born in 1990, which includes some Tuscan companies willing to undergo strict discipline throughout the entire production cycle.
Strict production standards include cultivation systems, harvest timing, crushing, preservation until bottling.
Each consignment of oil shall be authorised to be placed on the market under the Laudemio mark only after it has been subjected to chemical analysis and examination by a very strict tasting commission.

Cultivar: Frantoio 65%, Moraiolo 20%, Leccino 15%.
Production area: The olive groves of “I Mori” are located on the hills surrounding Florence, exactly in the locality of Malmantile, on an area of 9 hectares and consist of the following varieties: Frantoio 65%, Leccino 20%, Moraiolo 15%
Harvesting: carried out by hand and takes place by the end of November each year.
Preservation: harvested olives are stored in fresh and ventilated rooms on layers not exceeding 15 cm and no later than 48 hours from harvesting.
The crushing: The olives are ground by mechanical crushers.
The oil: Olive oil is stored in steel vats. Before bottling it is filtered by natural fall through a bed of cotton wool.
Tasting: A tasting commission of the Consortium of Laudemio submits the samples to an organoleptic examination and issues a judgment of suitability or non-fitness.

The Farm I MORI was born in the early seventies when the Giannelli family began to renew the crops of the small property that has since gone gradually widening. The company is located on the hills around Florence, in the Chianti area: the prevailing crops are naturally the vine and the olive tree. The CANNETA Farm which is located in Montalcino and which produces Brunello di Montalcino, Rosso di Montalcino and Sant'Antimo. Podere Canneta is a thousand meters from the ancient fortress: the 10 hectares of vineyards and the 2 hectares of olive groves are surrounded by 30 hectares of dense woods. In 1997 the Giannelli family acquired a new company, the Podere Canneta, located in Montalcino and which produces Brunello, Rosso di Montalcino and Sant'Antimo. Here, in addition to the expansion of the vineyards, in 2003 the construction of the new winery for winemaking, bottling, storage and tasting was completed. All Wineries have merged into the CANNETA Srl Agricultural Company allowing us to offer a wide range of Tuscan wines, whose production is still handled by the Giannelli family, respecting the environment and of tradition and with the certainty of being able to guarantee the genuineness and “Tuscanity” of our products.
