Satrico by Casale del Giglio is made from a blend of Chardonnay (40%), Sauvignon (40%), and Trebbiano Giallo (20%) harvested at the beginning of ripening to best preserve freshness and aromaticity. After selection and gentle pressing, the separation of the free-run must from the skins took place to initiate the fermentation process that lasted for 7-8 days at controlled temperature. Aging was carried out for a few months in steel tanks. The name Satricum comes from the ancient city of the same name founded by the Latins in the Pontine Plain, the earliest traces of which date back to the 9th century BC.
SATRICO CASALE DEL GIGLIO: TASTING
Satrico Lazio IGT by Casale del Giglio presents itself in the glass with a lively straw-yellow color. On the nose, aromas of ripe yellow-fleshed fruit emerge, combined with citrus and mineral notes. On the palate, it is soft and reveals a subtle freshness accompanied by a pronounced salinity. Excellent as an aperitif, it pairs well with vegetarian dishes, fresh and semi-aged cheeses, as well as recipes based on fish and shellfish.
