Le Marchesine's Franciacorta Brut Millesimato Secolo Novo was produced from 100% Chardonnay grapes coming from the company's La Santissima di Gussago vineyard, in the Passirano (BS) area. Following the manual harvest, carried out with a yield of 80 quintals per hectare, the whole bunches were subjected to soft pressing to produce the must. The first alcoholic fermentation took place in stainless steel tanks at a controlled temperature. After bottling, the inoculation of the "draft syrup" (a mixture of wine, sugars, yeasts and mineral substances) allowed the fermentation. This sumptuous bubble was refined in contact with yeasts for a period of 54 months. The residual sugar is equal to 5 grams/litre.
FRANCIACORTA BRUT MILLESIMATO SECOLO NOVO LE MARCHESINE: TASTING
The Franciacorta Brut Millesimato Secolo Novo by Le Marchesine is straw yellow in color with greenish reflections enlivened by a fine perlage. The nose bursts with aromas of ripe pear, lime and elderberry which combine with hints of balsamic herbs and delicate notes of marzipan and sweet spices. On the sip it is intense and creamy, fresh and with a layered minerality that persists in the long finish of flint, camphor and horseradish. At the table it goes well with cheeses and vegetarian dishes as well as tasty dishes based on fish, molluscs and crustaceans.
