The Cesanese Le Cese di Colline di Affile is produced in the surroundings of the town of the same name, in the province of Rome, a mountain area bordered by the Ernici mountains and the Simbruini mountains. We are in the Aniene Valley area, famous for its natural and artistic beauties, including the Simbruini Mountains Regional Park, the Benedictine Monasteries of Subiaco, the small medieval villages along the course of the Aniene river and the ancient villas of the Roman Emperors . The Le Cese vineyards are located at 500 meters above sea level, on clay-marly soils; the grapes are harvested by hand in the second half of October and crushed and destemmed. The maceration on the skins lasts 9 days, after which the must is drawn off and the alcoholic fermentation continues, then the malolactic one. The refinement always takes place in steel, on the fine lees in hyper-reduction for 6 months, then in the bottle.CESANESE DI AFFILE LE CESE COLLINE DI AFFILE: TASTINGThe Cesanese di Affile Le Cese di Colline di Affile is brilliant ruby red. The nose offers fresh aromas of sour cherry, violet, forest balsams, pepper and star anise, with subtle mineral hints. In the mouth it is fresh, with bursting fruit, tannin present and a slightly bitter finish. The perfect wine for sausages and pan'unto.
