Bortolomiol's Prosecco Prior represents the number one sparkling wine in Bortolomiol's traditional DOCG line. The Roman numeral on the capsule and the name “Prior” recall how Bortolomiol was the first to intuit and create this Brut sparkling wine when Prosecco di Valdobbiadene was still only Extra Dry. Prior is the symbol of the pioneering spirit of Giuliano Bortolomiol who believed in Prosecco di Valdobbiadene (today Valdobbiadene Prosecco Superiore Docg) and in the Martinotti-Charmat method of sparkling wine production for the creation of wines of great interest and pleasure. The grapes ripen in hillside vineyards grown with the traditional "modified cappuccina" method, are harvested in the second half of September and vinified at low temperatures with selected yeasts in the cellar. The second fermentation in the autoclave lasts between 25 and 30 days followed by approximately 3 months of refinement in the bottle.

The Prosecco Valdobbiadene Superiore Brut Prior by Bortolomiol is straw yellow with greenish reflections, shining with a dense and fine effervescence. The nose offers fragrant hints of pear and apple, snuffbox peach and bergamot, acacia and jasmine. The sip is fresh and fine, perfectly balanced, slightly savory and bitter. A perfect bubble to start lunch, perhaps paired with creamed cod on black bread.
