The Sauvignon Mock from Cantina Bolzano is part of the Selezioni line which brings together single-variety wines (apart from Santa Maddalena) with the best territorial expression. Mock is produced with grapes grown at 500 meters above sea level, on the slopes overlooking Bolzano; Bolzano is in fact located in an area particularly suited to viticulture: in the center of a large sunny basin surrounded by steep slopes. Care and attention to the land and the vines is a matter of primary importance for the winemakers of Kellerei Bozen - Cantina Bolzano, who every day use a sustainable approach that respects nature and the territory. The harvest takes place in September; the grapes undergo soft pressing, the must ferments in steel vats at a controlled temperature, and the wine is subsequently refined in steel, to preserve its grit and freshness.

MOCK CANTINA BOLZANO: THE TASTING
The Sauvignon Mock by Cantina Bolzano shines in the glass with a straw yellow color with broad greenish reflections; on the nose it presents the typical varietal scents with elegance: elderberry, sage, tomato leaf, white peach, acacia flowers, lime, yellow grapefruit, on a decidedly mineral base. The mouth is fruity, flowery, fresh, with a good structure and a significant lengthening. Excellent with asparagus risotto.
