Sàgana di Cusumano is a pure Nero d'Avola that comes from the historic Vigneto del Torrone Bianco, so called due to its characteristic soil as white as snow, of a calcareous nature; we are in Butera, Caltanissetta, inside the Tenuta San Giacomo, at 400 meters above sea level. The plants are on average 30 years old and the grapes ripen within the first 10 days of September. The completely destemmed bunches are fermented and macerated for about 2 weeks without ever raising the temperature above 30°C, so as not to compromise the aromatic expression. The wine undergoes malolactic fermentation in 20 hectoliter barrels, and is then aged for 18 months in these same barrels; a further period of maturation in glass follows before marketing.
SÀGANA CUSUMANO: TASTING
Sàgana di Cusumano has a brilliant ruby red color. On the nose it smells of Bulgarian rose, cherry and plum jam, Mediterranean balms, black pepper and sweet spices. In the mouth it is warm and enveloping, but at the same time fresh and salty, with delicate and mature tannins. The combination with stewed wild rabbit is perfect, in the traditional Caltanissetta recipe.
