Franz Haas's Pinot Noir Schweizer was the first wine from the company to be "dressed" by the Trentino artist Riccardo Schweizer in the late 1980s. The plants intended for this selection grow in areas carefully chosen for their microclimate. Individual vineyards are located at altitudes ranging between 350 and 700 meters and include a great diversity of soils (loamy, sandy, calcareous and gravelly soils). The high-density plantings and the use of selected low-yield clones ensure the highest quality of the grapes. Winemaking takes place in open tanks in which the fermenting must comes into contact with the skins through frequent pumping over and punching down. At the end of fermentation the wine passes into barriques in which malolactic fermentation takes place and subsequently maturation for a period of 12 months; a further year in bottle follows.

The Pinot Noir Schweizer label by Franz Haas presents a ruby red that varies from pale to intense depending on the vintage. Its bouquet seduces with ripe berries and cherries, dried plum, raspberry and strawberry jam, spicy notes of pepper, cinnamon, tobacco, tea and leather, all embraced by balsamic and woody hints. The mouth is elegant, with thick tannins, beautiful flavor and a balsamic finish. How delicious with jugged hare!
